The Juyondai “Kakushin” series offers unique, limited-edition sakes released each year between December and February only.

Honmaru means “the original” and is probably the Juyondai Signature Sake. This honjozo tokubetsu is 55% polished, and the jozo alcohol added to it is made in-house using shochu to make this sake even more unique. As it has not undergone pasteurization, it is able to retain its original aromas, giving it a fresh, sweet taste, a full, round mouthfeel and a very balanced overall feel. It has a semi-dry finish.

This sake has excellent mouthfeel and texture. With lots of umami, it goes very well with most foods. Good with raw oysters and sashimi.

Tasting notes: A transparent, lime-green color with good viscosity and a few bubbles. A clean nose with fruity aromas of ginjo (pear) and citrus (orange, tangerine), as well as sweeter notes (licorice, cotton candy). On the palate, a full-bodied semi-dry sake with lots of umami and good acidity, rather discreet alcohol, and a velvety texture with round, fruity flavors. On the finish, the sweetness of pear is balanced by notes of licorice and mandarin. In conclusion: a remarkable, well-balanced sake that reveals great complexity.

Pairings: Sashimi, raw oysters, Western cuisine.
