The master brewer was inspired by Umeshu, the famous summer Japanese plum wine, to produce Airubībakku (I'll be Back) sake. His goal was to create a drink that could bring out the unique characteristics of fruit while fusing them to create a fresh fruit drink. Pickle, wait, taste. Enjoy your own craft fruit liquor by combining it with your favorite fruits. A dry sake using that brings out the natural flavors of the fruit. Although it is a fruit drink, it is also good to drink alone.

 

Tasting note

So that it can be enjoyed alone, the addition of alcohol has been reduced to the minimum required for fruit maceration, i.e. 20%. Which gives a soft and clean attack, and a balanced flavor, and a lively and dry finish.

  • Seto Shuzo was founded in 1865 in Kaisei Town, Kanagawa Prefecture. In 1980 it was forced to close. Fortunately, in 2018, the brewery started sake production.

    Kanagawa landscape been marked by rice fields that change over the seasons, the murmur of water and old thatched houses, has raised this question: What would sake produced in this soothing environment taste like? From there, the plan to revive the activity came into action. The brewery was pretty much dormant for the best part of 40 years, however, in the short time since Mori-san and team took over its operations, not only have they been recognized with numerous awards for their sake, but they have created a very focused and strong branding model that looks set to take the brewery into a successful future.
